Watermelon Pizza
Ingredients
- 1 red onion, thinly sliced
- 1 watermelon (preferably seedless)
- 2 Persian cucumbers, sliced into 1/8“ rounds
- 4 oz. crumbled feta
- 1 small bunch fresh mint, thinly sliced or torn
- Kosher or flaky sea salt
- Crushed red pepper flakes (optional)
- Extra-virgin olive oil, for drizzling
Instructions
- In a small heatproof bowl, cover onion with hot water. Let sit 5 minutes.
- Meanwhile, cut a slice of watermelon crosswise from the center, about a 1 1/2“-thick round; reserve remaining watermelon for snacking. Arrange on a baking sheet. Layer cucumber slices on top of watermelon. Sprinkle with feta and mint.
- Drain onion and pat dry with paper towels. Layer onion on top of cucumber; season with a pinch of salt and a pinch of red pepper flakes (if using). Drizzle with oil.
- Slice into wedges to serve.
