Carrot Fries

Ingredients

  • 16 medium carrots peeled and cut into matchsticks about 4 inches long
  • 1 tablespoon oil
  • 1 teaspoon salt
  • freshly ground pepper to taste
  • 1/2 teaspoon ground cumin (optional)

Instructions

  1. Preheat the oven to 425F. Place the carrot sticks in a bowl and pour the olive oil over them. Using your hands, toss the carrots in the oil to thoroughly coat.
  2. Spread the carrot sticks in a single layer on a baking sheet lined with parchment paper. Sprinkle with the salt, pepper, and cumin.
  3. Bake the carrots until they begin to crisp, about 45 minutes, checking every 15 minutes or so to toss or turn the pan to ensure even cooking.
