French Fries

Ingredients

  • 2 Large Russet Potatoes Sliced to about 1/2“ x 1/2“ lengthwise
  • 1.5 Tablespoons Extra Virgin Olive Oil
  • 1.5 Teaspoons Fresh Rosemary Finely chopped
  • .75 Teaspoon Salt

Instructions

  1. Preheat oven to 425 F
  2. 1. Slice potatoes lengthwise into 1/2“ x 1/2“ wedges.
  3. 2. Soak wedges in a bowl of cold water for 15 - 20 minutes.
  4. 3. Drain and dry on paper towel.
  5. 4. Mix wedges, olive oil, salt and rosemary in a bowl.
  6. 5. Spread out on a nonstick cookie sheet and roast in the oven for 12 - 14 minutes.
  7. 6. Turn potatoes over and roast for 12 - 14 minutes more.
  8. For variations you can add a seasoned salt or, for spicy fries, some chili powder.
