Watermelon-Fennel Pico de Gallo

Ingredients

  • 2 1/2 c. chopped watermelon
  • 1 fennel bulb with fronds, cored and chopped
  • 1/4 medium red onion, chopped
  • 1/3 c. loosely packed fresh mint, chopped
  • 1 jalapeño, seeded and chopped
  • 4 tbsp. fresh lime juice (from about 2 limes)
  • Kosher salt
  • Tortilla chips, for serving

Instructions

  1. Combine watermelon, fennel and fronds, onion, mint, jalapeño, and lime in a bowl. Season with salt. Serve with tortilla chips.
