Watermelon-Fennel Pico de Gallo
Ingredients
- 2 1/2 c. chopped watermelon
- 1 fennel bulb with fronds, cored and chopped
- 1/4 medium red onion, chopped
- 1/3 c. loosely packed fresh mint, chopped
- 1 jalapeño, seeded and chopped
- 4 tbsp. fresh lime juice (from about 2 limes)
- Kosher salt
- Tortilla chips, for serving
Instructions
- Combine watermelon, fennel and fronds, onion, mint, jalapeño, and lime in a bowl. Season with salt. Serve with tortilla chips.
