Watermelon Za’atar Salad

Ingredients

  • 2 tbsp. fresh lime juice
  • 2 1/2 tbsp. olive oil
  • 1/4 c. Kalamata olives, pitted and finely chopped
  • 1 small jalapeño, halved lengthwise, seeded, and thinly sliced
  • 3 lb. watermelon, rind removed, quartered, and cut into large wedges
  • 2 tbsp. mint leaves, torn
  • 1/2 tbsp. za’atar
  • Flaky sea salt, for serving

Instructions

  1. In small bowl, whisk together lime juice and oil. Toss with olives and jalapeño; let sit 5 minutes.
  2. Arrange watermelon slices on large platter, spoon dressing on top, and sprinkle with mint, za’atar, and flaky sea salt.
