Watermelon & Blue Cheese

Ingredients

  • 29 chunks ripe watermelon 1 inch thick
  • 3 ozs blue cheese crumbled
  • Dressing:
  • 1 shallot, finely chopped
  • 1/4 cup champagne vinegar
  • 1/4 cup olive oil or canola oil
  • 1 tablespoon fresh thyme chopped
  • salt & pepper
  • 1/3 cup roasted pine nuts

Instructions

  1. 1. Place the watermelon pieces in a large bowl & crumble the blue cheese over the watermelon.
  2. 2. In a bowl, combine the shallot & champagne vinegar. Let the mixture stand for 10 minutes.
  3. 3. Whisk the oil & thyme into the shallot mixture until well blended. Season to taste with salt & pepper.
  4. 4. Drizzle the dressing mixture over the watermelon & blue cheese.
  5. 5. Sprinkle that with the roasted pine nuts & serve immediately.
