Watermelon & Blue Cheese
Ingredients
- 29 chunks ripe watermelon 1 inch thick
- 3 ozs blue cheese crumbled
- Dressing:
- 1 shallot, finely chopped
- 1/4 cup champagne vinegar
- 1/4 cup olive oil or canola oil
- 1 tablespoon fresh thyme chopped
- salt & pepper
- 1/3 cup roasted pine nuts
Instructions
- 1. Place the watermelon pieces in a large bowl & crumble the blue cheese over the watermelon.
- 2. In a bowl, combine the shallot & champagne vinegar. Let the mixture stand for 10 minutes.
- 3. Whisk the oil & thyme into the shallot mixture until well blended. Season to taste with salt & pepper.
- 4. Drizzle the dressing mixture over the watermelon & blue cheese.
- 5. Sprinkle that with the roasted pine nuts & serve immediately.
