Incredible Watermelon Salad from Taste of Home

Ingredients

  • 8 cups Cubed seedless watermelon
  • 1 small red onion cut into rings
  • 1 cup slivered almonds
  • 1 Cup Spring salad mix
  • 1/3 cup Balsamic Vinegar
  • 3 tablespoons Olive oil
  • 1 cup gorgonzola cheese
  • Watermelon slices for serving

Instructions

  1. In a large bowl, combine watermelon and onion; cover and refrigerate until cold, about 30 minutes.
  2. Just before serving, add almonds and salad mix to the watermelon mixture.
  3. In a small bowl, whisk olive oil and vinegar together and drizzle over salad; toss to coat. Serve over sliced watermelon and sprinkle with cheese.
