Summer Watermelon Tomato Salad
Ingredients
- 3 cups tomatoes small diced
- 1 cucumber, peeled seeded and small diced
- 1 cup watermelon seedless, or seeds remove
- 1 avocado, peeled pitted and diced small
- 3 tablespoons flax seed or olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon fresh basil
- sea salt to taste
- black pepper to taste
- Preparation Steps:
Instructions
- In a bowl, combine the tomatoes, cucumber, watermelon, avocado, and herbs.
- In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper to taste. Pour over the tomato mixture and toss gently to coat evenly. Taste and adjust the seasoning before serving.
- will keep for 2 days in the refrigerator.
