All-Star French Fries
Ingredients
- 3 Potatoes peeled, sliced
- 2 quarts Canola Oil
- Seasoned salt to taste
- Freshly ground pepper to taste
Instructions
- Always wash vegetables before preparing.
- Preheat canola oil in a stock pot or fryer to 325 (F) using a candy/fryer thermometer.
- Peel the middle of the potatoes leaving the skin on both ends.
- Cut potatoes in 1/4 inch to 1/3 inch slices and then cut into sticks.
- Place cut fries into cold water to help remove excess starch and keep them from oxidizing while you prep.
- Remove fries from water and pat dry to remove excess water.
- Place fries in hot oil and par cook for approximately 5 minutes or until light brown.
- Remove fries and lightly shake off excess oil and place on cooling rack to dry.
- Raise heat of oil to 350 (F)
- Cook fries again, until golden brown, about 2 minutes.
- Remove from oil, shake off excess oil.
- Season with seasoned salt and ground pepper to taste. Serve.
