All-Star French Fries

Ingredients

  • 3 Potatoes peeled, sliced
  • 2 quarts Canola Oil
  • Seasoned salt to taste
  • Freshly ground pepper to taste

Instructions

  1. Always wash vegetables before preparing.
  2. Preheat canola oil in a stock pot or fryer to 325 (F) using a candy/fryer thermometer.
  3. Peel the middle of the potatoes leaving the skin on both ends.
  4. Cut potatoes in 1/4 inch to 1/3 inch slices and then cut into sticks.
  5. Place cut fries into cold water to help remove excess starch and keep them from oxidizing while you prep.
  6. Remove fries from water and pat dry to remove excess water.
  7. Place fries in hot oil and par cook for approximately 5 minutes or until light brown.
  8. Remove fries and lightly shake off excess oil and place on cooling rack to dry.
  9. Raise heat of oil to 350 (F)
  10. Cook fries again, until golden brown, about 2 minutes.
  11. Remove from oil, shake off excess oil.
  12. Season with seasoned salt and ground pepper to taste. Serve.
