Watermelon Salad

Ingredients

  • 2 med red onions sliced as thinly as possible
  • 4 lemons juiced
  • 1 cup ricotta salata cheese (or feta)
  • 4 cups seedless watermelon diced in large pieces
  • 1/2 cup kalamata olives chopped and pitted
  • 1/4 cup fresh mint leaves loosely packed
  • 1/4 cup extra-virgin olive oil

Instructions

  1. 1. Marinate the onions in the lemon juice overnight, refrigerated.
  2. 2. Toast the cheese under the broiler until brown, then cool and shred.
  3. 3. Combine the marinated onions with the cheese and the remaining ingredients. Mix gently, but completely and serve immediately.
