Watermelon Salad
Ingredients
- 2 med red onions sliced as thinly as possible
- 4 lemons juiced
- 1 cup ricotta salata cheese (or feta)
- 4 cups seedless watermelon diced in large pieces
- 1/2 cup kalamata olives chopped and pitted
- 1/4 cup fresh mint leaves loosely packed
- 1/4 cup extra-virgin olive oil
Instructions
- 1. Marinate the onions in the lemon juice overnight, refrigerated.
- 2. Toast the cheese under the broiler until brown, then cool and shred.
- 3. Combine the marinated onions with the cheese and the remaining ingredients. Mix gently, but completely and serve immediately.
